What You Need: 1 cup of cantaloupe melon, chopped into cubes
1 tomato, sliced 1/2 pound fresh mozzarella cheese (I use the large ball and slice it, but feel free to use any size you'd like.)
1 teaspoon extra-virgin olive oil
1 teaspoon fresh basil, chopped
A dash of salt
A dash of freshly ground black pepper
How You Make It: Caprese salad is one of my most favorite meals in the world. It's simple, delicious, and so good for you. I'm always looking to jazz it up a bit, and when I saw an abundance of cantaloupes in the store the other day, I thought, why not give it a try with my caprese? The result is a light and refreshing twist on an old classic favorite. And a perfect way to use some of the tomatoes in your garden! Arrange the tomatoes and cantaloupe on a serving platter. Top with the slices of fresh mozzarella cheese. Drizzle the olive oil on top of the cantaloupe, tomatoes and mozzarella and sprinkle with the fresh basil, salt and pepper.
